PREPARING GRILLED SALMON

Ingredients:

  • 4 salmon steaks
  • 4 tablespoons olive oil
  • 4 tablespoons olive oil
  • 2 cloves of garlic
  • 1 red chilli
  • Lemon juice
  • 70g parsley
  • Salt
  • 2 spring onions
  • Pepper
  • 2 tablespoons apple cider vinegar

Preparation:

The first step in making grilled salmon is to prepare the parsley sauce, which can be made a few hours in advance if you prefer. Chop the spring onions, parsley, and chilli with a knife and combine them in a bowl. In a smaller bowl, make an emulsion with the 4 tablespoons of oil, apple cider vinegar, and lemon juice, whisking it together with a fork.


Next, pour the emulsion into the bowl with the chopped vegetables, mix everything well, and adjust the salt and pepper to taste. Then prepare the sautéed courgettes according to the specified quantities and click here for instructions on how to do it.


Now, prepare the salmon: divide the salmon into steaks, approximately 200g each. Meanwhile, heat a grill pan. Once hot, place the salmon steaks on the grill and cook them, turning them from side to side according to your preferred level of doneness.


Once cooked, serve the salmon steaks drizzled with the parsley sauce you prepared earlier. Bring the salmon steaks to the table along with a small bowl of parsley sauce so your guests can add as much sauce as they like to their salmon.
